Pirincli Yogurt Corbasi (Rice And Yogurt Soup) Recipe

* 1/2 cup rice
* 2 cups yoghurt
* 6 cups water
* 2 tsp dried mint leaves (crushed) or fresh mint very finely chopped)
* 1 1/2 tsp salt
* 1 tblsp butter or margarine
* 1 tsp paprika
Directions
Wash and drain the rice and put in a pot with 6 cups of water and boil until the rice is very tender and the water is thickened (stirring occasionally). Put the 2 cups of yogurt in a bowl and beat with a fork until smooth and add to the boiled rice gradually as you stir the mixture. Set aside and melt the butter in a separate pan and add the paprika. When it bubbles pour over the soup before stirring it add the crushed mint leaves and serve.
